  • Use cannellini beans: Replace the chickpeas with 3/4 cup (135 g) drained cannellini beans. Stir 3/4 cup (170 g) cottage cheese with 1 tbsp (15 g) lemon juice and 1/4 tsp (0.6 g) pepper, then spread it in a serving bowl. Cook the beans in 1 tsp (4.5 g) oil for 3 minutes, then add 1 tsp (2.7 g) toasted sesame seeds and 1/2 tsp (0.5 g) dried oregano for the final 1 minute, stirring continuously. Toss 2 cups (60 g) spinach, 1/2 cup (75 g) tomatoes, and 1/2 cup (52 g) cucumber with the other 1 tsp oil. Pile the vegetables over one side of the cottage cheese, spoon all of the warm beans over the other, and serve. Remains vegetarian. Still contains milk and sesame. Calories and protein stay similar, while the bowl becomes creamier and may contain slightly less fiber depending on the beans.
  • Use Greek yogurt: Replace the cottage cheese with 3/4 cup (184 g) plain nonfat Greek yogurt; stir it with 1 tbsp (15 g) lemon juice and 1/4 tsp (0.6 g) pepper, then spread it in a serving bowl. Cook 3/4 cup (114 g) chickpeas in 1 tsp (4.5 g) oil for 5 to 6 minutes, then add 1 tsp (2.7 g) toasted sesame seeds and 1/2 tsp (0.5 g) dried oregano for the final 1 minute, stirring continuously. Toss 2 cups (60 g) spinach, 1/2 cup (75 g) tomatoes, and 1/2 cup (52 g) cucumber with the other 1 tsp oil. Pile the vegetables over one side of the yogurt, spoon all of the warm chickpeas over the other, and serve. Remains vegetarian. Still contains milk and sesame. The yogurt version is tangier and usually lower in sodium, with brand-dependent protein and calories.
