  • Use tahini sauce: Replace the 60 g yogurt with 20 g tahini mixed with 20 g water. Brown 160 g grated potato in 9 g olive oil for 8 minutes. Whisk 3 eggs with 30 g spinach, 1 g oregano, 0.6 g black pepper, 0.75 g salt, and 3 g chives; pour over the potato, cover for 5 to 6 minutes until the center reaches 160°F, then serve with all of the tahini sauce and remaining 3 g chives. Remains vegetarian and is dairy-free when packaged ingredients are labeled dairy-free. Replaces milk with sesame and still contains egg. Tahini raises fat and calories and slightly lowers protein.
  • Use diced red pepper: Replace the 30 g spinach with 75 g finely diced red pepper. Brown 160 g grated potato in 9 g olive oil for 8 minutes. Whisk 3 eggs with the red pepper, 1 g oregano, 0.6 g black pepper, 0.75 g salt, and 3 g chives; pour over the potato, cover for 6 to 7 minutes until the center reaches 160°F, then serve with 60 g yogurt mixed with the remaining 3 g chives. Remains vegetarian. Still contains egg and milk; red pepper introduces no regulated major allergen on its own. Calories and protein stay similar, with a sweeter and firmer vegetable bite.
