Useful swaps
Use lemon tahini sauce: Replace the 60 g yogurt with 20 g tahini mixed with 20 g water and 5 g lemon juice. Crisp 160 g potatoes in 6 g olive oil with 0.375 g salt for 9 minutes. Cook 75 g red pepper in 3 g olive oil for 2 minutes, add 100 g tomatoes, 2.8 g garlic, 1.2 g smoked paprika, and remaining 0.375 g salt for 3 minutes, then add 3 eggs, cover for 4 to 5 minutes until their centers reach 160°F, and serve with all of the lemon-tahini sauce. Remains vegetarian and is dairy-free when packaged ingredients are labeled dairy-free. Replaces milk with sesame and still contains egg. Tahini raises fat and calories and slightly lowers protein.
Use spinach instead of pepper: Replace the 75 g red pepper with 60 g spinach. Crisp 160 g potatoes in 6 g olive oil with 0.375 g salt for 9 minutes. Add 3 g olive oil, 100 g tomatoes, 2.8 g garlic, 1.2 g smoked paprika, and remaining 0.375 g salt for 3 minutes; wilt the spinach for 1 minute. Add 3 eggs, cover for 4 to 5 minutes until their centers reach 160°F, and serve with 60 g yogurt mixed with 5 g lemon juice. Remains vegetarian. Still contains egg and milk; spinach introduces no regulated major allergen. The spinach version is slightly lower in calories with similar protein.
