  • Make a sofrito egg bowl: Omit the tortilla and spoon the complete potato, sofrito, spinach, and three-egg mixture into a bowl immediately after the eggs reach 160°F. Remains vegetarian and becomes wheat-free when all packaged seasonings are certified gluten-free. Still contains egg. Lowers calories and carbohydrate while keeping protein unchanged.
  • Use brown rice: Replace potato with 100 g cooked brown rice. Cook the pepper-tomato sofrito for 5 minutes, stir in rice and spinach with 15 g water for 2 minutes, add the three beaten eggs and cook to 160°F, then wrap. Remains vegetarian. Contains egg and wheat. Calories and protein remain close, with a softer filling.
