Use cottage cheese instead of feta: Warm a 50 g pita for 30 seconds per side. Cook 50 g tomatoes, 30 g spinach, and 1/2 tsp oregano in 1 tsp olive oil for 2 minutes. Whisk 3 eggs with 1/8 tsp black pepper, fold them through the tomatoes and spinach for 3 minutes, then add 70 g drained cottage cheese and cook for 1 minute more until the eggs reach 160°F. Stir in 1 tsp lemon juice and fill the pita. Remains vegetarian. Still contains egg, milk, and wheat. Cottage cheese raises protein slightly and makes the filling creamier while reducing feta's salty tang.
Make a tofu spinach pita: Warm a 50 g pita for 30 seconds per side. Crumble 180 g extra-firm tofu and cook it in 1 tsp olive oil for 4 minutes. Add 50 g tomatoes, 30 g spinach, 1/2 tsp oregano, and 1/8 tsp pepper; cook 3 minutes until steaming and dry enough to fill. Stir in 1 tsp lemon juice and spoon the complete mixture into the pita. Makes the pita vegan when the tofu and pita are labeled suitable for a vegan diet. Removes egg and milk, introduces soy, and retains wheat from the pita. The tofu version remains protein-rich but is less rich and slightly lower in protein than the egg-and-feta filling.
