Useful swaps
Make a tofu tamago-style bowl: Replace the 3 eggs with 200 g drained, crumbled extra-firm tofu. Cook 30 g spinach for 30 seconds in 1/2 tsp oil, add 150 g brown rice and 1 tsp soy sauce, and cook for 3 minutes until steaming. Cook the tofu in the other 1/2 tsp oil with 1 tsp vinegar, 1 tsp maple syrup, 2 tsp soy sauce, and 1 tbsp sliced scallion for 4 to 5 minutes until steaming hot. Spoon it over the rice and finish with another 1 tbsp sliced scallion and 1 tsp sesame seeds. Makes the bowl vegan when the tofu and packaged seasonings are labeled suitable for a vegan diet. Contains soy, sesame, and wheat; removes egg only when every packaged ingredient is verified egg-free. The tofu version remains high in protein but is usually lower in cholesterol and may be slightly lower in calories depending on the brand.
Use broccoli instead of spinach: Replace the 30 g spinach with 90 g finely chopped broccoli. Cook the broccoli in 1/2 tsp oil for 3 minutes, add 150 g brown rice and 1 tsp soy sauce, and cook 3 minutes more until steaming. Whisk 3 eggs with 1 tsp vinegar, 1 tsp maple syrup, 2 tsp soy sauce, and 1 tbsp sliced scallion; cook them in the other 1/2 tsp oil for 3 to 4 minutes until the center reaches 160°F. Serve over the rice with another 1 tbsp sliced scallion and 1 tsp sesame seeds. Remains vegetarian. Still contains egg, soy, sesame, and wheat. Broccoli adds more volume and fiber while keeping calories and protein in a similar range.
