Useful swaps

  • Use feta instead of cheddar: Crumble 40 g feta over the set eggs, cover for 1 minute to warm it, then finish with chives and black pepper. Remains vegetarian. Still contains egg and milk. Feta lowers calories slightly but raises sodium and does not melt as smoothly.
  • Use red pepper instead of leeks: Sauté 100 g sliced red pepper in 8 g butter with 0.4 g salt for 6 minutes. Add 60 g spinach and 5 g Dijon for 2 minutes, make three wells, add three eggs, cover 5 minutes to 160°F, then add 40 g cheddar and 4 g chives, cover 1 minute, and finish with pepper. Remains vegetarian but loses the named leek identity. Still contains egg and milk. Red pepper keeps calories close and adds a sweeter, firmer bite.
