  • Use white beans: Blend 140 g drained white beans, 35 g avocado, 10 g lime juice, 10 g tahini, 2 g garlic, 0.5 g smoked paprika, and 0.3 g salt for 75 seconds, stopping once with the motor off to scrape the cup. Pat four cabbage leaves totaling 80 g completely dry and trim their stiff bases without tearing them. Divide the white-bean dip among the four cups, scatter 8 g sliced scallion evenly over them, and serve immediately while the leaves remain crisp. Remains vegan. Still contains sesame. White beans keep protein similar and make a paler, milder dip.
  • Serve with carrot sticks: Replace the cabbage leaves with 70 g carrot sticks, portion the dip in a small bowl, scatter scallion on top, and serve cold. Remains vegan. Still contains sesame. Carrots add a sweeter crunch with similar calories.
