  • Use mozzarella: Boil 90 g orzo for 8 to 10 minutes and reserve water. Simmer garlic, oregano, 180 g tomatoes, pepper, and salt in 5 g oil for 4 minutes; wilt 50 g spinach for 90 seconds. Stir in 90 g yogurt, 55 g chopped mozzarella, 10 g lemon, and 50 ml pasta water, fold in orzo for 2 minutes, and rest 5 minutes. Remains vegetarian. Contains milk and wheat. Mozzarella lowers sodium and makes the sauce milder and stretchier.
  • Add artichoke instead of spinach: Cook and drain 90 g orzo. Simmer 4 g garlic, 0.7 g oregano, 180 g tomatoes, 0.3 g pepper, and 0.3 g salt in 5 g oil for 4 minutes, then add 80 g artichokes for 3 minutes. Stir in 90 g yogurt, 45 g feta, 10 g lemon, and 50 ml pasta water, fold in orzo for 2 minutes, rest 5 minutes, and add 15 g feta. Remains vegetarian. Contains milk and wheat. Artichokes add fiber and a firmer tangy bite with similar calories.
