  • Use whole-wheat couscous instead of rice: Coat 250 g tofu with 2 tsp olive oil, 10 g lemon juice, 3 g garlic, 3/4 tsp oregano, 0.5 g salt, and 0.3 g black pepper; air-fry at 400°F for 14 minutes, shaking after 8 minutes. Toss 60 g cucumber, 80 g tomatoes, and 30 g spinach with the remaining 1 tsp olive oil, remaining 5 g lemon juice, and remaining 1/4 tsp oregano for 30 seconds. Put 180 g cooked whole-wheat couscous and 15 g water in a covered air-fryer-safe dish and heat at 350°F for 5 minutes until steaming, then assemble it with the dressed vegetables and all of the tofu. Remains vegan when packaged ingredients are labeled suitable for a vegan diet. Introduces wheat from couscous and retains soy from tofu. Couscous keeps calories close while giving the bowl a lighter texture with slightly less fiber.

Toss 60 g diced red pepper, 80 g tomatoes, and 30 g spinach with the remaining 1 tsp olive oil, remaining 5 g lemon juice, and remaining 1/4 tsp oregano for 30 seconds. Put 180 g cooked brown rice and 15 g water in a covered air-fryer-safe dish and heat at 350°F for 5 minutes until steaming, then assemble it with the dressed vegetables and all of the tofu. Remains vegan. Still contains soy; red pepper does not introduce a major regulated allergen. Red pepper keeps calories and protein close while adding sweetness and a firmer crunch.
