  • Use chickpeas instead of black beans: Preheat the air fryer to 400°F. Toss 220 g dry tofu and 90 g pepper with 8 g avocado oil, 1 g smoked paprika, 0.5 g garlic powder, and 0.6 g salt; air-fry in one layer for 14 minutes, shaking after 8 minutes. Heat 130 g brown rice, 90 g drained chickpeas, and 60 g corn to 165°F. Arrange them with 50 g shredded cabbage and the crisp tofu-pepper mixture, then spoon 15 g lime juice over the bowl. Remains vegan. Contains soy; chickpeas add no major regulated allergen. Chickpeas keep calories similar with slightly less protein and a firmer bite.
  • Make a grain-light bowl: Omit the rice, increase cabbage to 100 g and black beans to 140 g, then layer with hot corn and the crisp tofu-pepper mixture before adding lime. Remains vegan. Contains soy. This lowers carbohydrates while maintaining fiber and much of the protein.
