  • Make it with crispy chickpeas: Replace the 200 g tofu with 180 g drained, rinsed chickpeas patted very dry. Air-fry 120 g red pepper and 100 g tomatoes with 2 g olive oil, 0.5 g smoked paprika, and 0.2 g salt at 400°F for 8 minutes. Air-fry the chickpeas with 2.5 g olive oil, 0.5 g smoked paprika, and 0.25 g salt for 12 minutes. Mash the vegetables with 15 g almond butter, 15 g lemon juice, 4 g garlic, the remaining paprika, and remaining salt. Warm 150 g rice with 1 tbsp water, covered, over medium-low heat for 3 to 4 minutes until steaming, then assemble the rice, chickpeas, and sauce. Remains vegan. The almond butter still contains tree nuts; check the packaged chickpea label for any additional warnings relevant to the diner. The chickpea bowl is usually higher in carbohydrate and fiber but lower in protein than the tofu version.
  • Use tahini instead of almond butter: Replace the 15 g almond butter with 15 g roasted sesame tahini. Air-fry 120 g red pepper and 100 g tomatoes with 2 g olive oil, 0.5 g smoked paprika, and 0.2 g salt at 400°F for 8 minutes. Air-fry 200 g pressed tofu with 2.5 g olive oil, 0.5 g smoked paprika, and 0.25 g salt for 12 to 14 minutes. Mash the vegetables with the tahini, 15 g lemon juice, 4 g garlic, the remaining paprika, and remaining salt. Warm 150 g rice with 1 tbsp water, covered, over medium-low heat for 3 to 4 minutes until steaming, then assemble the rice, tofu, and sauce. Remains vegan. Replaces the tree-nut ingredient with sesame; the tofu still contains soy. Check packaged tahini for cross-contact if required. Calories and protein stay close, while tahini gives the sauce a more pronounced sesame flavor.
