  • Use chickpeas instead of white beans: Soak 28 g torn whole-wheat bread in cold water for 1 minute and squeeze it dry. Blend it with 100 g drained chickpeas, 4.5 g olive oil, 5 g lemon juice, 2 g grated garlic, 0.3 g black pepper, 0.3 g salt, and 1 tbsp cold water for 90 seconds, scraping once. Scrape into a bowl, cover and chill for 5 minutes, then serve with 35 g carrot sticks. Remains vegan. Still contains wheat from bread; chickpea cross-contact depends on the packaged product. Chickpeas lower protein slightly and make the skordalia nuttier and firmer with fewer calories.
  • Use cucumber dippers instead of carrots: Soak 28 g torn whole-wheat bread in cold water for 1 minute and squeeze it dry. Blend it with 100 g drained white beans, 4.5 g olive oil, 5 g lemon juice, 2 g grated garlic, 0.3 g black pepper, 0.3 g salt, and 1 tbsp cold water for 90 seconds, scraping once. Scrape into a bowl, cover and chill for 5 minutes, then serve with 40 g dry cucumber spears. Remains vegan. Still contains wheat from bread; cucumber does not introduce a major regulated allergen. Cucumber lowers calories slightly and adds a cooler, juicier crunch.
