Useful swaps

  • Use white beans: Replace 180 g chickpeas with 180 g drained white beans and crush about half with a fork. Whisk 15 g tahini, 15 g harissa, 15 g lemon juice, 1.4 g grated garlic, 0.6 g cinnamon, 0.6 g smoked paprika, 0.5 g salt, and 15 g water for 30 seconds; fold in all of the beans. Fill a 64 g whole-wheat pita with 30 g spinach, 75 g carrot matchsticks, and all of the harissa white beans, then serve cold. Remains vegan when the pita is labeled suitable for a vegan diet. Still contains wheat and sesame; white beans introduce no additional regulated major allergen. White beans make the filling creamier with similar calories and protein.
  • Use almond butter: Replace 15 g tahini with 15 g almond butter. Fill a 64 g whole-wheat pita with 30 g spinach, 75 g carrot matchsticks, and all of the harissa chickpeas, then serve cold. Remains vegan when the pita is labeled suitable for a vegan diet. Replaces sesame with tree nuts and still contains wheat. Calories and protein remain close, with a sweeter nut flavor.
