Useful swaps

  • Use white beans instead of chickpeas: Blend 110 g drained white beans, 10 g tahini, 60 g drained jarred roasted pepper, 10 g lemon juice, 2 g grated garlic, 1.2 g smoked paprika, 4.5 g olive oil, 0.3 g salt, and 1 tbsp cold water for 90 seconds, scraping once. Fill 40 g dry cucumber cups with half, pack the rest with 35 g carrot sticks, seal, chill for 5 minutes, and serve cold. Remains vegan when packaged ingredients are labeled suitable for a vegan diet. Still contains sesame; white-bean cross-contact depends on the packaged product. White beans increase protein slightly and create a softer, creamier dip with similar calories.
  • Use tomato instead of roasted pepper: Blend 110 g drained chickpeas, 10 g tahini, 60 g dry halved cherry tomatoes, 10 g lemon juice, 2 g grated garlic, 1.2 g smoked paprika, 4.5 g olive oil, 0.3 g salt, and 1 tbsp cold water for 90 seconds, scraping once. Fill 40 g dry cucumber cups with half, pack the rest with 35 g carrot sticks, seal, chill for 5 minutes, and serve cold. Remains vegan when packaged ingredients are labeled suitable for a vegan diet. Still contains sesame; tomato does not add a major regulated allergen. Tomato keeps calories and protein close but makes the hummus brighter, softer, and less smoky.
