  • Use tahini in the romesco: Replace 10 g roasted almonds with 10 g tahini. Boil 2 eggs for 9 minutes until the centers reach 160°F, cool them in cold water for 2 minutes, then peel and halve. Blend 60 g drained roasted pepper with the tahini, 4.5 g olive oil, 10 g lemon juice, 1.4 g grated garlic, 1.2 g smoked paprika, 0.5 g salt, and 10 g water for 60 seconds. Pack all of the romesco with the four egg halves, 60 g carrot sticks, 75 g cucumber sticks, and 75 g halved tomatoes. Remains vegetarian. Replaces tree nuts with sesame and still contains egg. Calories and protein remain close, with a smoother sesame-forward sauce.
  • Use all-carrot dippers: Replace 75 g cucumber with 75 g additional carrot, for 135 g carrot total. Boil 2 eggs for 9 minutes until the centers reach 160°F, cool them in cold water for 2 minutes, then peel and halve. Blend 60 g drained roasted pepper, 10 g roasted almonds, 4.5 g olive oil, 10 g lemon juice, 1.4 g grated garlic, 1.2 g smoked paprika, 0.5 g salt, and 10 g water for 60 seconds. Pack all of the romesco with the four egg halves, 135 g carrot sticks, and 75 g halved tomatoes. Remains vegetarian with the same romesco identity. Still contains egg and tree nuts; carrots introduce no additional regulated major allergen. Calories and protein remain similar, with a sweeter and firmer vegetable side.
