  • Use white beans: Replace lentils with 220 g drained white beans and reduce water to 150 g. Slow-cook 2 hours 30 minutes on HIGH, then add spinach and olives for 10 minutes and finish with balsamic. Remains vegan. No major allergen introduced. Protein decreases slightly and the stew stays chunkier.
  • Make it olive-free: Omit the 30 g olives and increase the drained roasted red pepper from 120 g to 190 g. Add 100 g rinsed red lentils, 150 g halved tomatoes, all 190 g pepper, 100 g diced carrot, 5 g grated garlic, 1.5 g smoked paprika, 1 g oregano, 9 g olive oil, 0.8 g salt, and 350 g water to the slow cooker. Cover and cook on HIGH for 3 hours 25 minutes. Stir in 60 g spinach, cover for 10 minutes until the stew reaches 165°F, then stir in 10 g balsamic vinegar and rest 5 minutes before serving. Remains vegan. No major allergen introduced. Sodium decreases and calories stay similar.
