  • Use crumbled tofu: Replace 200 g eggs with 250 g pressed extra-firm tofu, crumbled. Heat 9 g avocado oil in a lidded skillet; add 150 g potato cubes, 30 g water, and 0.5 g salt, cover for 6 minutes, then uncover and brown for 3 minutes. Add 75 g diced red pepper for 2 minutes, then add 100 g halved tomatoes, 2.8 g grated garlic, 1.2 g onion powder, 0.6 g smoked paprika, 0.6 g black pepper, and the remaining 0.25 g salt for 2 minutes. Wilt 30 g spinach, fold in the tofu, cook for 4 to 5 minutes until steaming, and finish with 5 g lemon juice. Makes the skillet vegan when all packaged seasonings are labeled suitable for a vegan diet. Replaces egg with soy. Protein remains substantial, with no dietary cholesterol and a firmer texture.
  • Use brown rice: Replace 150 g potatoes with 150 g cooked brown rice. Cook 75 g diced red pepper for 2 minutes in 9 g avocado oil, then add 100 g halved tomatoes, 2.8 g grated garlic, 1.2 g onion powder, 0.6 g smoked paprika, 0.6 g black pepper, 0.75 g salt, the rice, and 15 g water for 3 minutes until the rice is steaming. Wilt 30 g spinach, make four wells, add 4 eggs, cover for 3 to 5 minutes until every egg reaches 160°F, and finish with 5 g lemon juice. Remains vegetarian and becomes softer rather than crisp-edged. Still contains egg; rice introduces no additional regulated major allergen. Calories and protein stay similar, while rice shortens the cooking time.
