  • Use Greek yogurt sauce: Bring water to a gentle boil, lower in three eggs, cook 8 minutes, then transfer to ice water for 3 minutes. Stir 30 g Greek yogurt with 5 g lemon juice for 45 seconds. Peel and halve the eggs, sprinkle them evenly with 3 g za'atar, 0.3 g salt, and 0.2 g pepper, then plate with 80 g cucumber spears, 70 g cherry tomatoes, and all yogurt sauce. For higher-risk diners, cook the eggs until yolks and whites are firm at 160°F. Remains vegetarian. Replaces sesame with milk and retains egg. Greek yogurt lowers calories and fat while adding a little protein.
  • Use carrots instead of cucumber: Replace cucumber with 80 g carrot sticks and serve them beside the za'atar eggs, tomatoes, and lemon tahini. Remains vegetarian. Still contains egg and sesame. Carrots add a sweeter, firmer crunch with similar calories.
