Useful swaps

  • Use peanut butter: Whisk 180 g soy milk, 12 g peanut butter, 8 g chia, 5 g maple, 2 g vanilla, 1 g cinnamon, and 0.2 g salt. Stir in 50 g oats, cover and chill 8 hours, then stir and add 12 g chopped almonds. Remains vegan. Adds peanut while retaining soy and tree nut. Peanut butter increases protein slightly and makes the horchata note nuttier.
  • Make it nut-free: Whisk 180 g soy milk, 12 g tahini, 8 g chia, 5 g maple, 2 g vanilla, 1 g cinnamon, and 0.2 g salt. Stir in 50 g oats, cover and chill 8 hours, then stir and add 8 g toasted sesame seeds. Remains vegan but becomes sesame-based rather than almond horchata-inspired. Replaces tree nuts with sesame and retains soy. Tahini keeps calories similar with slightly less protein.
