Use chimichurri tofu: Replace chicken with 220 g pressed tofu. Sear it in 4 g oil for 9 minutes until browned, warm the 150 g rice and 70 g chickpeas to 165°F, then bowl them with the tofu, 70 g cucumber, 80 g tomatoes, and all cilantro-chive chimichurri.
