  • Use salmon pieces instead of shrimp: Cube 180 g skinless salmon. After steam-searing the potatoes, add the salmon with 130 g corn, 5 g garlic, 0.8 g smoked paprika, 0.5 g salt, 0.3 g black pepper, and the remaining butter; sear for 5 to 6 minutes, turning once, until the salmon reaches 145°F. Remove from heat, toss with 10 g lemon juice and 4 g chives for 30 seconds, then rest 1 minute before serving. Remains pescatarian. Replaces shellfish with fish; still contains milk from butter. Salmon raises calories and omega-3 fat while keeping protein high.
  • Use olive oil instead of butter: Cover 160 g quartered potatoes with 45 ml water in a skillet over medium-high heat for 6 minutes; uncover, evaporate the water, add 5 g olive oil, and cook 2 minutes.
