Useful swaps

  • Use salmon: Replace shrimp with 180 g salmon cut into cubes. Heat 5 g oil in the skillet, season salmon with half the salt and paprika, and sear 3 minutes per side to 145°F before transferring to a clean plate. Cook pepper in remaining oil for 2 minutes, add tomato and garlic for 90 seconds, then cover rice, orange, lime, remaining salt, and 20 g water for 3 minutes. Fold salmon and cilantro through only at serving. Remains pescatarian. Replaces shellfish with fish. Protein remains high and fat increases.
  • Use couscous: Replace rice with 180 g cooked whole-wheat couscous. After the red pepper, tomatoes, and garlic soften, add the couscous, orange, lime juice, salt, and 15 g water for 2 minutes, then fold in the cooked shrimp and cilantro. Remains pescatarian but contains gluten. Introduces wheat and still contains shellfish. Calories and protein remain close.
