Use salmon tostadas: Brush two 35 g tortillas with 4 g avocado oil; crisp each in a skillet over medium heat for 2 minutes per side. Add 4 g oil, 180 g cubed salmon, 4 g garlic, and 0.5 g salt; cook 5 to 6 minutes to 145°F, then toss with 7.5 g lime for 30 seconds. Heat 80 g black beans and 50 g corn to 165°F. Divide them over the tostadas, then add 50 g cabbage, salmon, 50 g avocado, and the remaining 7.5 g lime immediately before serving. Remains pescatarian. Replaces shellfish with fish and retains wheat. Salmon raises calories and omega-3 fat while keeping protein high.
Serve as a rice bowl: Replace the tostadas with 150 g hot brown rice and layer beans, corn, cabbage, shrimp, avocado, and lime over it. Remains pescatarian and becomes wheat-free if all packaged foods are certified. Still contains shellfish. Rice makes the meal softer with similar carbohydrates and calories.
Storage and reheating
