Useful swaps

  • Use tofu instead of shrimp: Cook 60 g diced red pepper in 13.5 g olive oil for 3 minutes; add 4 g grated garlic, 1 g oregano, and 0.3 g black pepper for 30 seconds, then add 150 g halved tomatoes for 4 minutes. Add 250 g pressed tofu cubes and cook for 7 minutes until browned and steaming. Wilt 30 g spinach for 1 minute, add 80 g crumbled feta, cover for 1 minute, then finish off heat with 10 g lemon juice and rest for 1 minute. Makes the skillet vegetarian; replace feta with tahini as well for a vegan version. Removes shellfish, introduces soy, and retains milk from feta unless it is replaced. Tofu lowers protein and calories while creating a firmer bite that still carries the tomato-feta sauce.
  • Use cottage cheese instead of feta: Cook 60 g diced red pepper in 13.5 g olive oil for 3 minutes; add 4 g grated garlic, 1 g oregano, and 0.3 g black pepper for 30 seconds, then add 150 g halved tomatoes for 4 minutes. Cook 200 g peeled shrimp for 3 to 4 minutes until opaque and 145°F, wilt 30 g spinach for 1 minute, then remove from the heat and fold in 100 g drained cottage cheese plus 10 g lemon juice for 30 seconds; rest for 1 minute and serve. Remains pescatarian. Still contains shellfish and milk. Cottage cheese raises protein, lowers fat, and makes the sauce creamier but less briny.
