  • Use salmon: Replace the 180 g shrimp with 180 g salmon cut into cubes. Pour 105 g boiling water over 70 g couscous and half the 0.7 g salt; cover 5 minutes, then fluff. Heat 4 g of the 7 g oil over medium-high and cook the salmon with all 5 g garlic for about 3 minutes per side until it reaches 145°F; transfer to a clean plate. Add the remaining 3 g oil, 15 g harissa, 60 g chickpeas, 80 g roasted pepper, and 15 g water; cook 2 minutes, then wilt all 40 g spinach. Fold in the couscous and salmon, add all 15 g lemon juice and the remaining salt, and serve immediately. Remains pescatarian. Replaces shellfish with fish; wheat remains. Protein remains high and fat increases.
  • Use brown rice: Replace couscous with 180 g cooked brown rice. Warm it with chickpeas, pepper, harissa, and 20 g water for 3 minutes before folding in spinach and cooked shrimp. Remains pescatarian and can be gluten-free when harissa is certified. Contains shellfish. Calories and protein remain close.
