  • Use salmon: Replace shrimp with 180 g salmon cubes. Bloom saffron in 30 g boiled water for 5 minutes. Sear salmon in 5 g oil with garlic, paprika, and half the salt for about 3 minutes per side to 145°F, then transfer. Cook pepper, corn, and tomatoes in remaining oil for 2 minutes, add rice, saffron water, and remaining salt, cover 3 minutes, then fold in salmon and finish with lemon. Remains pescatarian. Replaces shellfish with fish. Protein remains high and fat increases.
  • Use short-grain rice: Replace brown rice with 190 g cooked short-grain rice. Bloom saffron in 30 g boiled water for 5 minutes. Sear garlic-paprika shrimp in 5 g oil for 2 minutes per side to 145°F and transfer. Cook pepper, corn, and tomatoes in remaining oil for 2 minutes, add short-grain rice, saffron water, and remaining salt, cover 3 minutes, then fold in shrimp and finish with lemon. Remains pescatarian. Contains shellfish. Calories and protein remain close.
