  • Use tofu: Replace the 180 g chicken with 250 g pressed tofu cut into 1 cm-thick strips. Toss the tofu for 60 seconds with 4 g of the 7 g oil, all 1.2 g paprika, half the 5 g ginger, half the 4 g garlic, all 8 g hot sauce, and half the 0.8 g salt; sear for 8 minutes until browned and transfer. Cook 90 g pepper, 150 g tomatoes, remaining oil, ginger, garlic, and salt for 4 minutes; stir in 60 g rinsed basmati for 1 minute. Add 60 g chickpeas and 120 g water, boil, cover, and simmer on low for 12 minutes. Remove from heat, scatter over 40 g spinach, cover 5 minutes, fluff, and top with every tofu strip. Makes the bowl vegan when hot sauce is vegan. Replaces poultry with soy. Protein decreases and fat rises slightly.
  • Make it rice-only: Omit the 60 g chickpeas and increase dry basmati from 60 g to 75 g. Toss 180 g chicken cut into 1 cm-thick strips for 60 seconds with 4 g of the 7 g oil, 1.2 g paprika, half the 5 g ginger, half the 4 g garlic, 8 g hot sauce, and half the 0.8 g salt; sear for 6 to 7 minutes to 165°F and transfer. Cook 90 g pepper, 150 g tomatoes, remaining oil, ginger, garlic, and salt for 4 minutes; stir in the 75 g rinsed basmati for 1 minute. Add 145 g water, boil, cover, and simmer on low for 12 minutes. Remove from heat, scatter over 40 g spinach, cover 5 minutes, fluff, and top with all chicken. Remains balanced. Contains poultry. Fiber and protein decrease slightly.
