  • Use cottage cheese dressing: Replace the yogurt with 100 g low-fat cottage cheese. Mash it thoroughly with a fork, then whisk in 4.5 g olive oil, 15 g lemon juice, 1 g dill, and 0.6 g pepper to make a thick, lightly textured dressing. Drain and flake 150 g tuna; fold in 100 g diced cucumber, 80 g carrot matchsticks, 80 g diced red pepper, and all of the dressing. Chill for 5 minutes, stir, and serve with 64 g whole-wheat pita wedges. Remains pescatarian. Still contains fish, milk, and wheat. The cottage-cheese dressing is thicker and generally adds a little protein and energy.
  • Make a white bean crunch salad: Replace the tuna with 150 g drained, rinsed canned white beans. Whisk 60 g Greek yogurt with 4.5 g olive oil, 15 g lemon juice, 1 g dill, and 0.6 g pepper. Fold the beans with 100 g diced cucumber, 80 g carrot matchsticks, 80 g diced red pepper, and all of the dressing. Chill for 5 minutes, stir gently, and serve with 64 g whole-wheat pita wedges. Makes the salad vegetarian; it is not vegan because the dressing contains yogurt. Contains milk and wheat. Check the canned-bean and pita labels for any additional warnings relevant to the diner. The bean version adds fiber and more carbohydrate while keeping protein near the catalog minimum.
