Useful swaps

  • Use salmon: Replace the chicken with one 6 oz (170 g) salmon fillet. Roast 200 g (about 7 oz) potatoes with 1 1/2 tsp (6.75 g) oil and 0.75 g salt at 425 F for 10 minutes. Stir the other 1 1/2 tsp (6.75 g) oil and remaining 0.75 g salt with 1 tbsp (15 g) lemon juice, 1 garlic clove (3 g), 3/4 tsp (0.75 g) oregano, and 1/4 tsp (0.6 g) each paprika and pepper. Reserve one-third in a clean bowl for 1 1/2 cups (150 g) green beans, then coat the salmon with the other two-thirds. Add both, roast 10 to 12 minutes until the salmon reaches 145 F, rest 3 minutes, and serve. Changes the recipe from balanced omnivore to pescatarian. Introduces the fish allergen. Protein remains similar, while salmon generally increases total fat and omega-3 fat.
  • Use sweet potato: Replace the potatoes with 200 g (about 7 oz) sweet potato cubes. Roast them with 1 1/2 tsp (6.75 g) oil and 0.75 g salt at 425 F for 10 minutes. Stir the other 1 1/2 tsp (6.75 g) oil and remaining 0.75 g salt with 1 tbsp (15 g) lemon juice, 1 garlic clove (3 g), 3/4 tsp (0.75 g) oregano, and 1/4 tsp (0.6 g) each paprika and pepper. Reserve one-third in a clean bowl for 1 1/2 cups (150 g) green beans, then coat 6 oz (170 g) chicken with the other two-thirds. Add both, roast 15 to 18 minutes until the chicken reaches 165 F, rest 5 minutes, slice, and serve. Remains a balanced omnivore recipe. Does not introduce a major allergen to the base recipe. Calories and carbohydrates remain close, with more beta-carotene and a sweeter flavor.
