  • Use cod pieces: Cover 70 g couscous with 85 g boiling water for 5 minutes and fluff with half the lemon. Sear 200 g cod cubes in 10 g oil with paprika, salt, and pepper for 5 to 6 minutes to 145°F. Add garlic, tomatoes, olives, and spinach for 2 minutes, then fold in couscous and remaining lemon. Remains pescatarian. Replaces shellfish with fish and retains wheat. Cod lowers calories slightly while keeping protein high.
  • Use wild rice: Heat 180 g cooked wild rice to 165°F. Heat 10 g olive oil in a skillet over medium-high; add 180 g shrimp, 1 g smoked paprika, 0.5 g salt, and 0.3 g pepper and cook 2 minutes per side to 145°F. Add 4 g garlic, 100 g tomatoes, 25 g olives, and 50 g spinach; cook 2 minutes. Fold in the hot wild rice and 15 g lemon juice, toss until evenly glossy, and serve immediately. Remains pescatarian and becomes wheat-free if packaged foods are certified. Still contains shellfish. Wild rice adds a chewier texture with similar calories.
