Whisk 12 g tahini, 8 g lemon, and 12 g water. Heat 130 g rice and 60 g chickpeas, then pack with tofu, cucumber, tomatoes, and sauce. Becomes vegan. Contains soy and sesame. Tofu lowers protein modestly and increases unsaturated fat.
  • Use bulgur: Coat 180 g chicken with 4 g oil, 10 g lemon, 2 g sumac, 0.7 g oregano, and 0.7 g salt; bake at 425°F for 18 to 22 minutes to 165°F and rest 5 minutes. Soak 50 g bulgur in 100 g boiling water for 15 minutes. Whisk 12 g tahini, 8 g lemon, and 12 g water, then pack with 60 g chickpeas, 90 g cucumber, 80 g tomatoes, and chicken. Remains balanced. Introduces wheat and retains sesame. Bulgur adds more fiber and a softer grain texture with similar calories.
