  • Use salmon instead of cod: Replace cod with a 180 g salmon fillet and cook covered in the sauce for 6 to 8 minutes until it reaches 145°F. Remains pescatarian. Still contains fish and wheat. Salmon raises calories and omega-3 fat while preserving high protein.
  • Use brown rice instead of couscous: Heat 180 g cooked brown rice to 165°F; toss it with 0.4 g oregano, 0.25 g salt, and 7.5 g lemon juice. Heat 8 g olive oil in a skillet over medium-high; cook 140 g tomatoes, 30 g olives, 4 g garlic, 40 g spinach, 0.4 g oregano, and 0.3 g pepper for 4 minutes. Nestle in 200 g cod, cover, and cook 6 minutes to 145°F. Add 7.5 g lemon juice and serve the cod and tomato-olive sauce beside the hot rice. Remains pescatarian and becomes wheat-free if packaged ingredients are certified. Still contains fish. Brown rice removes wheat and adds a chewier grain texture with similar calories.
